Carrot Soup

Ingredients

  • 3 tbsp. butter
  • 6 large carrots, peeled & sliced
  • 1 medium onion
  • 1 large potato, peeled & diced
  • 4 cups beef or chicken broth
  • 4 cups water mixed
  • 4-6 beef or chicken bouillon cubes
  • 1/2 tsp. sugar
  • Salt & pepper to taste

Directions

In a large pot, melt the butter on medium heat. Add carrots, onions, and potatoes and cook over medium heat until lightly browned (about 15 minutes). Next, add beef or chicken broth, sugar, salt & pepper.  Reduce heat and cook until tender, approximately 30 minutes. Serve as is, or if you’d like a smooth consistency, blend in a blender or food processor.
